I made this recipe the other day for dinner with Seth’s cousin and her husband, and I have had enough people ask for a bite (and the recipe) while eating leftovers at work that I figured I should just write a quick post about it and share it with the world. It’s adapted from a recipe I got from Platejoy, a meal planning app that I love. So here it is without further ado: Pulled Pork (?) Sweet Potatoes.
I add the question mark because I have made this with pork, bison, and beef roasts at this point, and they’re all equally delicious. You will need:
- 4(ish) pounds of pork/bison/beef roast
- 2 red onions
- Garlic (minced)
- 1 cup chicken or beef broth
- 4 whole sweet potatoes
- chili powder
- paprika
- cayenne pepper (optional)
- 1/2 cup of apple cider vinegar
- 2 cups BBQ sauce (I go with a hickory smoked one usually)
- arugula (optional, but encouraged)
- green onion (optional, but also encouraged)
This is seriously the easiest recipe ever. Slice the onions and add to crock pot. I usually just chop them in half and then into long slices. You can pretty much do it however you like. Add as much minced garlic as you like (for me, this is like 3 or 4 tablespoons). Add the roast to the crock pot last. Sprinkle with chili powder, paprika, cayenne pepper, and salt. I’m pretty generous with all of these except the cayenne. Add the cup of broth. Turn your crock pot on low for 8-10 hours, or high for 5-7 (depending on your pot). It’s done when it pulls apart easily.
Preheat your oven to 400 F. Wash sweet potatoes and line up on a pan (yes including the skin). Bake for 45 minutes or until the insides feel tender when you stick a fork in it. When they’re done, cut in half length wise (you should end up with eight long, skinny sweet potato halves).
While the sweet potatoes cook, remove the tender meat from the crock pot and pull with a two forks (or whatever you use). Make sure you leave the liquid in the bottom of the pot. To the pot liquid, add the cider vinegar and the BBQ sauce. Turn the crock pot on high and cook for about 30 minutes. Throw the pulled meat back into the crock pot after the 30 minutes is up and stir to mix in sauce.
To put the whole thing together, take half a sweet potato and top with about 1/8 of the pulled meat (with sauce). Top that with about 1/2 a cup of arugula and a sprinkling of green onion if you are so inclined. Then enjoy!
This reheats really great in the microwave. Just make sure you add the green stuff after you heat it up. On serving (1/2 a potato and about an 1/8th of the meat, plus greens) is about 500 calories with over 50 grams of protein. Yummy and pretty good for you!
