At Caesar’s Palace Eating Salads

I made this recipe for dinner the other day, and Seth surprised me by saying it’s one of his favorites. I always thought it was delicious and it’s insanely fast and easy, but I also thought that Seth just tolerated it as food. He will literally eat just about anything. Seriously. But since it is apparently more of a hit than I thought, I decided to share it. I give you the Chicken Caesar Pizza.

I can’t take credit for this recipe idea. I used to go to this great little restaurant called East Side Mario’s in Livonia with my high school boyfriend. I ordered this pizza once and never ordered anything else again. But after I stopped eating there quite as often, I realized I could probably make the same pizza myself. And I’ll say now that none of this is made from scratch. It is totally a “came home late from work and stopped at the store on the way” kind of dinner. So here’s what you need:

  • A pizza crust (I like Boboli wheat thin crust)
  • Pesto (I use a whole jar of Classico Pesto)
  • Mozzarella cheese (as much or as little as you like)
  • Chicken breast (one is plenty)
  • One head of Romaine lettuce
  • Caesar dressing (I just use Kraft)
  • Caesar croutons

Here’s how you put it together. Cook the chicken through with some salt and pepper (and maybe some garlic). I use a George Foreman grill, but you can bake it or pan fry it. It doesn’t matter as long as it’s cooked. When it’s done, cut it into small cubes (however you like it is really fine). Spread the pesto on the pizza crust.

Cover that in as much mozzarella cheese as you want. Sprinkle the chicken chunks on top.

Bake the pizza according to the instructions on the crust packaging or until the cheese is gooey and delicious. While the pizza is baking, cut the romaine into bite-sized pieces. Slather it in caesar dressing. Seriously. Don’t be shy or you won’t be able to taste the caesar because of all of the pesto.

This is the most important step: CUT THE PIZZA INTO 4 SLICES BEFORE YOU TOP IT WITH THE SALAD! If you ignore my advice, this whole dish will become a hot mess as you try to cut it. It is really the worst.

Once you cut the pizza, dump the whole salad on top and sprinkle on some croutons. Bam! Done. And this is not something you eat with a fork, people. You pick up that ¼ of a pizza and eat it with your hands as pizza should be eaten!
